And I have to admit it is so damn good. And it's so easy.
You take a can of sweetened condensed milk, a can of frozen lemonade or limeade concentrate (I made lime), and a small tub of Cool Whip, and a prepared graham cracker crust. Thaw out the fruit juice concentrate and the Cool Whip. Combine the fruit juice with the condensed milk, mix well, then add the Cool Whip and whisk until fully combined. Pour it into the pie crust, cover and freeze overnight. It is so creamy and delicious.

That sounds wonderful R37. I'm going to look for the pineapple juice concentrate for the next time I make it as I love pineapple. Frankly, I've never noticed frozen pineapple juice concentrate in the freezer case. I may also try using frozen orange juice concentrate.
The final texture of this pie is very much like soft serve ice cream, only more firm. And yes, it is quite sweet and that's why I've told people they only want a small slice. Well,unless you're just a hog for sweetness.

For mango mousse, in a blender simply combine equal parts mango concentrate (NOT juice) and sweetened condensed milk. Blend until thick. That's it! I have purchased mango concentrate in a local Latin market. You can probably also find it on Amazon.
You can top the mousse with softly whipped cream if you like.
You could also fold softly whipped cream into the mousse if you think that would be more to your liking.

Pesto is easy, delicious, and seasonal. I think it is best made in a mortar and pestle, but you could also use a food processor.
[bold] GREG’S POSITIVELY DELICIOUS BASIL PESTO RECIPE [/bold]
[bold] INGREDIENTS [/bold]
- 2 Tablespoons of pine nuts
- 1 teaspoon kosher salt
- 2 garlic cloves, peeled
- 2 cup packed basil leaves
- 1/2 cup extra-virgin olive oil
- 1/4 cup finely grated Parmigiano-Reggiano
- 1/4 cup finely grated Pecorino Romano

[bold] PROCEDURE [/bold]
1. Use a large mortar and pestle if possible, and pound the pine nuts, salt, and garlic into a very smooth paste. This will take 5–7 minutes.
2. Add the basil 1/2 cup at a time, working it into the mixture after each addition, until the mixture is smooth and creamy. This will take a solid 15–20 minutes.
3. While stirring with the pestle, gradually add the oil until fully emulsified. This will take about 3 minutes more.
4. Stir in the Parmigiano and Pecorino Romano.
This is delicious, but requires a full 30 minutes of pounding and grinding in the mortar and pestle.

I made the apple pie/cake thingie (I think my mom always called it apple bake?) today and here are the general measurements:
Two 20 oz cans of apple pie filling One box of yellow cake mix One stick of salted butter
Put the pie filling in an 8x8 pan, sprinkle as much of the cake mix on top as you wish (I use a lot) then place bits of butter all over the top of that. Bake at 350 until the butter is nice and melty and the filling is hot. The cake mix will still look powdery, but the butter will spread around enough.
It’s really one of those throw-together desserts that can be adjusted to taste, e.g. I like salty-sweet, so I used salted butter today. YMMV.
It’s hard to mess this up and it’s just so buttery and yummy.
